Brownies

I've been baking a lot of brownies lately, I think it's because of the cold dark weather it just screams chocolate cake and hot chocolate.

The first ones I want to share with you are Crack Brownies. They have nothing to do with crack, but they are as addictive as crack :)


They were absolutely amazing and rich. I swear I could feel arteries close while I was eating them. The first layer is brownie, these are just from a box. Next a layer of peanuts, chopped Reese's peanutbutter cups and marshmallows, this layer was lightly melted together by returning the cake to the oven for 5 mins. The top layer is a mix of chocolate, peanutbutter and Rice Krispies. They are really worth for a special occasion og the holidays.

I have also been baking just regular brownies these are really good, no mess brownies.  But they taste amazing and have really gooey texture.

Slimmers' Breakfast Muffins

I have been baking these muffins a lot lately, they are so good!!! They are my perfect breakfast thing: sweet, but not to sweet, filling and kind of healthy. I have tweaked the recipe a bit, to make them a bit more healthy. I cut the sugar to 75 gr and added a small finely grated beetroot instead (Sounds weird but try it!). Instead of butter I use 3/4 dl sunflower oil and I use 40 gr of oats. I think I'm going to try with just 50 gr of sugar next time. Give them a try, they are good :)

Eight-strand plaited loaf

To start of my blog I thought I would try something challenging: So I did a eight-strand plaited loaf from the technical challenge in episode 2 (series 3) of The Great British Bake Off (One of my favourite shows on tv). And it was challenging, this is actually my 2nd attempt I didn't really succeed in my first attempt. But after I figured out how plaiting technique worked, that part of the recipe wasn't the most difficult. I did cheat a little bit and watched this video a few times before hand. I'm not really sure I succeeded this time either, but its definitely better than my first attempt. I did simple three strand plait with the leftovers.

I substituted the dry yeast with fresh yeast, because dry yeast isn't really that common to use in baking in Denmark (Think that's a whole other blogpost right there). And I didn't use as much salt as the recipe says, but other than that I stuck to the recipe.
